A choc chip cookie skillet is a one pan dessert, that's easy to make and tastes delicious. You end up with a gooey centre and crispy edges satisfying everybody's cookie needs. This recipe came about as I was trying to find things to cook in my Daiso Cookie Skillet, I picked a couple up as they are cast iron, cute, and cheap. I then had to justify my purchase by using it, here is my favourite Daiso skillet recipe so far, enjoy.
This recipe makes 2 x cookie skillets with a little left over.
Skillet size: 13cm (5 inch)
Ingredients
57g butter unsalted
52g (1/4 cup) brown sugar
30g raw sugar
1 small egg
100g all purpose flour
1/4 teaspoon baking soda
A good Pinch of salt
90g / 1/2 cup chocolate chips
Method
preheat the oven to 180 degrees C (355 F)
cream together the butter and brown sugar until smooth and creamy
add in the egg and mix thoroughly
mix your dry ingredients together in a seperate bowl; flour, baking soda, salt.
once mixed, combine your dry mixture into your wet mixture, mix slowly until a dough is formed
fold in the chocolate chips
fill 2 x cookie skillets with mixture, leaving approximately a 4-5mm gap from the top on the skillet.
place on a baking tray and put in the fridge to rest for 30 minutes
bake for 15-20 minutes, or until the edges are lightly golden
best served with fresh pouring cream, or ice cream.
