Having grown up with this delicious Caramel Slice I find it impossible to buy a caramel slice from local bakeries, the disappointment became too much. You'll find this recipe perfectly balance in flavour, and in proportion. My hope is you enjoy, and share this recipe with family and friends as my family has for years.
Ingredients
300g (12 oz) Butter
150g (6 oz) S.R. Flour
200g (8 oz) Sugar
2 tbsp Golden Syrup
300ml evaporated milk
150g Lindt Dark Chocolate
Base
100g (4 oz) Butter
150g (6 oz) S.R. Flour
50g (2 oz) Sugar
Mix the butter, flour, and 50g sugar together in a mixer.
Press and then spread in a Swiss roll tin 10 inches x 7 inches. Press down well.
Bake at 180 C for 15-20 min
Caramel
200g (8 oz) Butter
150g (6 oz) Sugar
2 tbsp Golden Syrup
300ml evaporated milk
Melt 200g butter, add 150g sugar, Golden syrup and the evaporated milk, gently heat until dissolved.
Bring to the boil, then simmer for about 15min until thick, STIR ALL THE TIME!
Chocolate Topping
Melt 150g of chocolate and cover the caramel once it is cold.
Finish with a sprinkle of sea salt, and store in the fridge. Enjoy
Note: I use 100g Lindt 70% smooth blend, and 50g Lindt 78% smooth dark.
